creamy pot pie soup

It is soup season. We have had a few cold fronts come through and while some days are still reaching higher temperatures than I would like, we are loving soups and this creamy pot pie soup has become one of our favorites.

Make this up in a large batch and eat on it all day (one of my favorite ways to keep belly’s full). Great for busy days or cozy nights in next to the wood stove.

What I love about this is it is a take on one of our favorite meals of chicken pot pie but also it stretches the meal a bit and it is easily changed up based on what you have. Make this low carb by taking out the potatoes, vegetarian by leaving out the meat, or use up any meat you have (chicken or turkey would both be delicious!). Add biscuits or homemade bread on the side for a heartier meal. This is ultimate comfort food without the guilt!

Healthy Pot Pie Soup

I am a firm believer in eating what you love. I will never give up bread or desserts. That is just not in my plans. Ever.

However, I am a proponent of recreating recipes with more wholesome ingredients. They usually taste much better and make us all feel much better. For example, switching regular chicken or vegetable stock with homemade bone broth. I talk about the benefits of this in my bone broth post!

This soup calls for gut healthy bone broth, loads of vegetables and fresh herbs, and delicious roasted chicken. I added cream to make this that much more delicious and give it that pot pie creaminess everyone loves.

When I first started cooking from scratch, I was so excited about all of the recipes I was creating. I spent countless hours recreating recipes on random scraps of paper, only to lose them later on and have to start from scratch again. That is when I created my kitchen journal to organize my recipes. How to Make Creamy Pot Pie Soup

I made a chicken in my Instant Pot the night before. I also did not have any bone broth made up and usually will use the juice from cooking my chicken or throw the bones back in the pot and make up a batch before starting the rest of the soup.

First, melt butter in stock pot or dutch oven and get it nice and hot.

Chop carrots, potatoes, garlic and onion. Add to pan and sauté until slightly soft. Add frozen peas.

Next, add chicken and broth and allow to simmer. Several hours is best but this can also be whipped up quickly as well.

Add cream and seasonings and allow to simmer again.

Serve hot with biscuits, cornbread or sourdough.
