One of the most basic, yet difficult to crack (pun definitely intended) skill to master in the kitchen is boiling fresh eggs. While store bought eggs are not quite as tricky (due to age possibly) and this instant pot hard boiled eggs recipe may seem like a silly recipe to those using store bought eggs, for those with a flock of hens in their backyard it is one topic that can get ya worked up.

In the south, deviled eggs are a big deal. Especially in my household. So imagine boiling a dozen or two eggs for deviled eggs and then spending far too long peeling them just to end up with ugly, misshapen egg whites that can barely hold the filling. Ay yai yai. For egg salad this is not such a big deal except that when we make a meal, we MAKE A MEAL Y’ALL and we have no time for hours of peeling stuck on eggshells. Enter in the perfect instant pot hard boiled eggs recipe.
Don’t worry, I have you covered. This is such a simple “recipe” that will give you perfect hard boiled eggs every time with no sticking shells. I mean it. Even if the egg is still warm after you gathered it.


Now I’m not going to lie, this is just now a new problem for me. As you know, we are building our small little farm slowly starting with the most obvious addition: laying hens. So the whole idea of fresh eggs being difficult to hard boil is fairly new because despite my love of local food, we have just now found another family willing to sell eggs. So again, all new issues.
But as you know, I am traditional in most everything except one: I love my Instant Pot. The reason I love my Instant Pot is not because I can cook anything and everything at the speed of lightening. In fact, there are plenty of things promoted for the Instant Pot that will NEVER see the inside of my beloved stainless pot.
I love my Instant Pot because it makes traditional cooking much more doable. I’m talking bone broth, yogurt, slow cooking (want to cook a whole chicken without it going dry? Slow cooking is one way. I share three ways to cook a whole chicken here.), etc. I love old school cooking and the way of life clearly, but I also love reading, writing, and spending time with my family so the Instant Pot helps with balance, ya know?
So today I want to share just another way my Instant Pot supports traditional cooking and share an instant pot hard boiled egg recipe that will change your life. Or your husbands life if yours is like mine and can down a whole dozen in a matter of minutes. Or maybe this seems dramatic to you and you cannot possibly imagine how making hard boiled eggs could be a life changing experience. No matter, let’s get to it.
What You Will Need
Instant Pot with Trivet
Dozen Eggs
Water
Ice Water

Peep at that sweet little baby hand. She loves to carry the eggs from the coop inside so anytime eggs are around, she HAS to hold them. It seems she has a way of popping up in every photo I take and sometimes I do not even realize it until I go to edit the photos!
How To Make This Instant Pot Hard Boiled Eggs Recipe
Add trivet to bottom of pot. Add 1-2 cups water- enough to just reach the bottom of the trivet.
Add all 12 eggs.
Check the lid for the seal and lock.
Set for 5 minutes on high pressure.
Once done, allow to naturally release for 5 minutes. While the pressure releases, get ice water together in another bowl.
After 5 minutes, release the remaining pressure and add all eggs to the ice bath for 3-5 minutes.
Eggs can be peeled immediately or placed back in fridge for longer storage.



Why Don’t My Hard-Boiled Eggs Peel Easily?
Fresh eggs have a lower pH causing the egg white to better bind to the membrane of the shell. The older the egg, the less it binds together. Eggs from the store usually do not do this because they are older. I actually read online just the other day that store bought eggs are eight weeks old by the time they hit grocery store shelves, on average. Of course, I have no idea how true this is because I do not work with grocery stores but I found it interesting. And a little gross.
Anyway, regardless of storebought or fresh eggs from your hens or a local farm, I have had great success with this method. Even with eggs that were from within the hour.
How To Store Hard Boiled Eggs
If you store the eggs in the uncracked shell, they will last about a week in an airtight container. If you peel them first, I would suggest eating within the same day or the next.
