I am back with the fall cooking because I just cannot help it. It may be a little early but I am ready for cooler weather, cozy food and all things the next season is offering.
We recently were given several packages of sausage and bone-in pork chops by some friends. They raise pigs and are very kind to share with us. As soon as they mentioned pork chops I knew I had to create some type of apple pork dish. This is one of my favorite combinations.
After raiding the fridge, I came up with maple pork chops with apples. This is not a new meal. I tend to use maple syrup to add flavor to meat a lot. It adds a slight sweet taste and an automatic fall feeling to a meal so this seemed perfect. Pair it with some apples and roasted Fall vegetables and you have a one pan, from scratch meal.
My Favorite Type of Meal
While this is a recipe for Maple Pork Chops with Roasted Vegetables and Apples, it is not a new concept. And it is one I use often. I love meal ideas that can be switched around to create something totally different. You can mix it up by changing out the meat or vegetables. You could do more of a summer theme by using shrimp or chicken and pairing it with summer squash and corn. Or steak with peppers, onions, tomato, and corn for more of a mexican theme. Swap the maple out for some lime juice and you have a totally different flavor with the same concept. This is a great option for seasonal cooking because you can just swap out each item with what is in season and what local farms can offer.
This is also a great meal for when you are short on time or are new to cooking. It is simple to throw together. Chop some veggies, set some meat on top and drizzle with a few seasonings. Ten minutes top and then the rest is hands off baking time. This certainly does not take any longer than popping a frozen lasagna in the oven and is much better for you.

You really do not need much for this meal. Just a baking dish or two. You can use cast iron, glass baking dishes (I would recommend a 9×13) or even a sheet pan.

- 5 Mushrooms
- 1/2 Onion
- 1-2 Heads or 1 frozen bag Broccoli
- 1 Sweet Potato
- 5 Carrots
- 2 Apples
- 4 Pork Chops
- 2-4 tablespoons butter
- 2/3 Cup Maple Syrup
- 4 cloves garlic, minced
- 1 teaspoon parsley
- 1 tablespoon Salt
- Fresh black pepper
How to Make Maple Pork Chops with Roasted Fall Vegetables and Apples

- Preheat oven to 425 degrees.
- Coat baking dish in grass fed butter. Add chopped vegetables in a single layer.
- Layer your pork chops on top.
- Sprinkle apples on top.
- First add the maple syrup and drizzle over pork and vegetables. Next add garlic.
- Sprinkle parsley, salt and pepper. Lastly add sliced butter all over pork and vegetables.
- Bake for 30 minutes at 425 degrees. Then broil on low for 3-5 minutes, watching closely.
